Sweet Bourbon Salmon Bake
1 salmon fillet
1/2 cup olive oil
1/4 cup pinapple juice
2 tablespoons brown sugar
2 tablespoons soy sauce
1 tablespoons bourbon
1/4 teaspoon garlic salt
1/8 teaspoon pepper
marinate in large ziploc for 3 to 4 hours turn and baste
when done baste again and again and keep basting... best cooked on BBQ in aluminum foil
Poor Mans Lobster
six cups water
1lb cubed halibut
1/3 cup sugar
1/3 cup salt
2 tablespoons butter
approx. 1 teasoon dill
1 garlic clove, minced
juice of 1 fresh squeezed lemon
bring water to rolling boil, add halibut and cook until the halibut is just done-do not over cook or it will be tough. Strain the fish and set aside. In the same pan melt butter, add dill, garlic and lemon and then add the fish and gently stir to coat fish. wonderful served with rice and salad ....
Dble Duty brine recipe for salmon or you can use it for jerky!
- Fillet your slabs so they're boneless. Cut them into strips, head to tail, about an inch wide and the length of the fillet.
- In a large bowl mix the following:
1/2 cup coarse salt
2 cups demerrera sugar (darkest brown sugar)
1 cup terriaki
2 minced cloves of garlic
1 Tbsp. fresh cracked black pepper
1 Tbsp. cayenne pepper
2 Tbsp. Worcestershire
1 cup apple juice
1 cup water - Mix 'er up good. Put your strips in there and make sure they're well covered. Soak about 6 or 7 hours, take them out and you'll see they're colored and firm. No need to rinse them.
- Place them on sprayed racks (Pam or similar) and put the smoke to them for about 4 hours. Then put the heat to them moving the racks around so they get done evenly, and dry them till you like. Enjoy!
